When you’re busy with your daily routine, there may come a time when you suddenly want to stuff your mouth with delicious meat and quench your throat with a cold drink. In today’s blog, I would like to share my passion and Jan’s unique commitment to the perfect combination of “Yakiniku and beer” that everyone loves.
■A magical combination that creates moments of bliss■

“Yakiniku and beer”. I think there are many people who just hear these words and feel the fatigue from work melt away, and they naturally start choking. Meat grills on a hot grill making a sizzling sound. As the fragrant smell fills the air, I pour an ice-cold beer into a golden glass and let it flow down my throat. This moment is truly a moment of bliss.
The rich flavor of the meat and the sweetness of the high-quality fat fill your mouth, and the addition of the carbonated beer and the refreshing bitterness of the hops resets your palate. Then, the desire to eat another piece of meat arises again. I am convinced that this ultimate synergistic effect, which can be called an infinite loop, is the real pleasure of yakiniku, which is unmatched by any other combination of food and alcohol.
At our restaurant, “Jan,” we operate every day without making any compromises, from the quality of our meat to the way we serve our beer, in order to provide our customers with the ultimate experience at 100%, or even 120%.

In order to provide the best Yakiniku experience, the quality of the meat, which is the main ingredient, is of paramount importance. I, Yun, use my years of experience and unique routes to carefully select and purchase the meat that is in the best condition that day. We are particularly particular about the freshness and the way the meat is cut.
For example, one of our signature menu items, “Wagyu beef short ribs,” uses only the finest cuts with beautiful marbling. However, simply serving good meat is not the “Jan” style. We carefully hand-cut each piece of meat by carefully determining the fibers of the meat and choosing the thickness and angle that will make each cut the most delicious. This handiwork creates a melt-in-your-mouth soft texture that you can never get with machine cutting, and the sweetness of the meat juice that overflows with every bite.
In addition, “Wagyu Misuji”, which allows you to fully enjoy the flavor of red meat, and “Jami Skirt”, which is juicy and chewy, are also very popular menu items that have been returned by many customers. The unique, wild flavor of skirt steak becomes even deeper when combined with our special homemade massage sauce.
And “jotan salt” is essential to the beginning of yakiniku. Only the softest part of the tongue is used, and seasoned simply with salt, pepper, and sesame oil. If you squeeze a squeeze of lemon and enjoy it by simply grilling it, the crispy texture and juicy meat will put a smile on your face.

Once you’ve prepared the finest meat, it’s time for its partner, beer. For Yakiniku restaurants, beer is not just a drink, but an important item for bringing out the best taste of the meat. At our store, we offer “draft beer (medium mug)” (660 yen, tax included), and we pour extraordinary passion into each and every beer.
First of all, it’s the management of the mug. The mug into which beer is poured is chilled in a special refrigerator, maintaining the perfect temperature to form a light layer of frost on the surface. If you use a mug at room temperature, the temperature of the beer will rise and the carbonation will easily escape.
And how to pour. Keeping the server nozzle clean is of course the golden ratio for beer and foam.“7 to 3”We are particular about perfectly reproducing. The creamy, fine-grained foam acts as a “lid” that prevents the beer’s carbon dioxide from escaping, preserving the taste until the last drop. The moment it is brought to your table, you can see the contrast between the water droplets running down the surface of the mug, the pure white foam, and the golden liquid.“looks delicious!”All of our staff members are trained in pouring beer so that you can feel that way.

■The bond between the town of Otsuka and “Jan”■
Otsuka, where our store “Jan” is located, is a wonderful town that still retains a nostalgic downtown atmosphere and a sense of humanity, even though it is located in the metropolis of Tokyo. The Toden Arakawa Line runs leisurely, and the shopping street is a mix of old-fashioned independent shops and shops with new energy, creating a unique vibrancy. I really love this city called Otsuka.
When I stand in the store, I often feel the warmth of Otsuka. A regular dad pops in on his way home from work and relaxes from the day’s fatigue by grabbing some offal at the counter and drinking beer. On weekends, families of three generations, from grandparents to grandchildren, lively and lively around the table. Recently, we have seen an increase in the number of young couples and students who come from far away to visit us after seeing us on social media.
One day, a young customer who came to our store for the first time, on his way home, said,“It was the most delicious Yakiniku I’ve ever had! I’ll definitely come again!”He told me this with a big smile. The moment I heard those words, all the fatigue I felt from preparing the food went away in an instant, and I felt truly grateful to be running a yakiniku restaurant here in Otsuka.
