I entered this world at the invitation of a friend, and was sent to work at a meat wholesaler, where I cut meat from morning until evening.At night, I worked at my friend’s restaurant, instilling the know-how of yakiniku. After 5 years of training, I finally opened my own shop, “Jan”.

The town of Otsuka is an amazing town filled with really delicious yakiniku restaurants. That’s why we have a strong commitment and passion for providing “better quality meat” than other restaurants.

If the meat we receive from our supplier is mushy, we will return it without any compromise. We select only the highest quality, firmest meat, mainly using Sendai beef, and sometimes Matsusaka beef for short ribs and tomobara. Also, since I myself like lean meat such as fillet, we also offer Wagyu beef fillet, which you don’t often see at Yakiniku restaurants these days, in order to differentiate ourselves from other restaurants.

The secret to deliciousness is “additive-free homemade sauce”

Our homemade sauce brings out the best in our meat. In fact, since my mother disliked chemical seasonings (umami seasonings) ever since I was a child, “Jan” does not use any chemical seasonings in the sauce.

The soy sauce sauce that serves as the base for yakiniku is handmade by blending several types of fruits and slowly simmering it for about 5 hours.
