At Jan, we carefully source only the highest grade of Kuroge Wagyu beef, focusing on top-tier A5 rank meat, including famous brands like Sendai beef. The marbling is truly like a work of art, but having good meat is only the first step.
Drawing from my years of experience working in meat distribution and running this restaurant, I personally inspect every single block of beef we receive. Every cut of meat has a different fat distribution and muscle fiber orientation. Even for popular cuts like Kalbi or Loin, a tiny difference of just one millimeter in thickness or the placement of hidden cuts can completely change how the meat feels and melts in your mouth. By carefully trimming unnecessary sinews and cutting at the optimal angle against the grain, I ensure that every piece achieves a melt-in-your-mouth texture.
